Maple Syrups
Making maple syrup has always been a way of life in the Allegheny Highlands of Virginia. Pat remembers a layer of steam filling the valley as each farm along Back Creek made enough syrup for themselves and a little extra to sell. Today, ours is the only working sugarhouse left on Back Creek, and while we strive to maintain traditions, we are also taking maple syrup in whole new directions. We are creating maple infusions using native plants as well as exotic blends. Our barrel-aged syrups combine the sweetness of maple with the amazing flavors of fine spirits. Try our Hickory syrup, too! We are always working on new flavors, and we love visitors. When you visit Highland County, Virginia, stop by for a tour and tasting (and some story-telling). If you come during “sugar season” (February-March), the aroma is worth the trip! Pure Maple Syrup:
Our pure maple syrup is made over wood fires, a family tradition reaching back well over 100 years. Unique to North America, pure maple syrup is all-natural and contains numerous trace minerals and antioxidants. So good – and good for you!
Infusions:
A twist on tradition! Maple syrup pairs surprisingly well with so many flavors, from lavender to chili pepper! Our infusions expand the uses for maple syrup well beyond pancakes. From a glaze for meat or vegetables to a unique sweetener for your favorite cocktail, infused maple syrups will expand your culinary horizons.
Barrel-Aged:
The perfect blend of two unique traditions, our pure maple syrup aged in bourbon, whiskey, and rye barrels. These distinctive flavors take the flavor profile of maple syrup to a whole new level! And just like fine spirits, our Limited Edition syrups are labelled by Batch, Barrel, and Bottle number.
